Coleslaw Fresca with Prawns
Hello Again,
Long time no post, my apologizes. I've been working and trying to get back into school. However I plan on blogging once a week (God willing) so that I can share and update you all on what I've been doing in the kitchen.
So the other day I was fooling around at work, and used some fresh ingredients to create this dish!
It's a new take on Salsa Fresca or Pico De Gallo, I call it "Coleslaw Fresca w/ Prawns"
So what you will need for this dish are as followed:
Prawns marinade:
- 1 bag of raw deveined Prawns, another term for shrimp (any size except jumbo will do)
- 3tbs cumin
- 1lime juiced
- 1/2c. oil
- salt & pepper to taste
First remove all ends from prawns.
Next toss all ingredients in a bowl and put in the fridge for about 10-15min
Coleslaw Fresca:
- 1 bag of coleslaw mix
- 4oz of chopped cilantro
- 2 medium tomato diced
- 2 onions small diced (I prefer red onion but white is fine)
- 2 jalapenos deseeded and small chopped
- 2oz of green onion thinly sliced
- 1 lime juiced
- 1/2 lemon juiced
- 2tbs cumin
- 2 pieces of small chopped garlic
- salt & pepper to taste
- Diced mango for the topping
After chopping all of the vegetables,
Add cilantro, tomato, onion, green onion, jalapenos, lime, lemon, cumin, garlic, salt and pepper, in a bowl and toss a few times
Put in fridge for about 10 min
Next:
Remove Prawns from fridge
Heat up a sauté pan
Throw Prawns in and cook till opaque or pink
Remove from heat and let it cool down
Lastly:
Toss the coleslaw and the Fresca mixture together, bowl as is and top with prawns and mango.
Another way to eat this is with some mixed greens at the bottom of a bowl, topped with Fresca mix, prawns and mango for a refreshing salad.
