7 Ingredient Spicy Tomato Asparagus Soup
It has been a cold January month here in the state of florida, with temperatures reaching below 40 degrees. I do not know about you guys but when I left New York years ago I expected to leave the cold temperatures there as well. However I am thankful for a change in weather. With this weather comes many desires of things to eat, but nothing beats a warm cup of soup.
So what better way to enjoy this weather while on the daniel fast then to have a cup of 7 Ingredient Spicy Tomato Asparagus Soup. Perfect not only for the season but also for colds and stuffy noses that are in parallel to the winter season. By the way the 7 ingredients do not include seasoning that will be used.
The recipe goes as follows:
7 Ingredient Spicy Tomato Asparagus Soup:
- 2-Cans V8 Juice original
- 1/2 Onion
- 5-oz of Asparagus Chopped
- 1-Tomato diced
- 2- Cloves Garlic Chopped
- 1/4c Cornstarch Slurry (2tbs cornstarch & water)
- Salt & Pepper
- 1-Tbs Cayenne Pepper (may use less)
- 2-Tbs Dry Basil Leaves
- 2-Tbs Dry Oregano
- Oil (olive, grapeseed or coconut)
Directions:
In a pot heat up oil, add in chopped garlic, and onions, saute. Add in s&P, cayenne pepper, basil, oregano and V-8 juice, and 1/2 the asparagus, then stir. Bring to a slight boil, taste then put together cornstarch slurry and stir in to soup while at a boil. soup should be a little thick. In a small saute pan place 1tbs oil and garlic, salt and pepper. Add in diced tomato and the rest of the asparagus and saute. Use as garnish for the soup.
