Hi Guys & Happy New Year!
Can you believe it is already 2016!! I know 2015 was an interesting year for some, however whether it was good, bad, uneventful or exciting; God still has a plan for you and there is a reason that you are here Jeremiah 29:11.
Now obviously with the beginning of the year comes the Daniel Fast for those who participate in it. The daniel fast is a fast where people who participating remove meat, dairy, processed & fried foods, caffeine and sugar from their diets, for a consecrated amount of time. In this time prayer is being done frequently, many also use this as a time for direction and clarity for the new year.
I am currently participating in the fast and will be sharing a few recipes to make this new way of eating not so boring while also trying to keep an all bean diet at bay. I played around and made a great filling Veggie Taco w/ Avocado Cream Sauce on corn tortillas. This recipe happens to be vegan and vegetarian friendly.
Veggie Taco Recipe
- 4- Corn Tortillas
- 1/2-Carrots (peeled & sliced)
- 1/2-Onion (sliced)
- Bunch Kale
- 1/2-Green Pepper
- 2-oz Peanuts
- 1-Tbs Salt & pepper
- 2-Tbs Indian Spice Mix (curry, turmeric, & cumin)
- 2-3oz Coconut oil
- 1-garlic clove
Avocado Cream Sauce
- 1/2 Ripe Avocado
- Salt & pepper
- 1-oz Cilantro (chopped)
- 1/2 Can Coconut Milk
- 1-oz Chickpeas
Start with the avocado cream sauce. Place everything but coconut milk in a blender and while blending on low speed, start to drizzle in coconut milk until smooth, taste and season to liking.
In a skillet add 2-3 oz of coconut oil, toss in garlic clove and onions till you aroma. Add in the rest of the vegetables, plus salt and pepper then indian spice mix, saute till veggies are soft. Remove everything from pan, place tortillas & peanuts in the pan and warm.
Now you're ready to Plate. Take tortilla fill with veggies and top with Avocado Cream Sauce.
